Ingredients
  

For the Fritters
  • 2 medium zucchini, grated Squeeze out excess moisture
  • 1 cup fresh peas, cooked or frozen and thawed
  • 1/2 cup all-purpose flour Can substitute with whole wheat or chickpea flour
  • 2 eggs
  • 1/4 cup fresh herbs, chopped (such as parsley, dill, or mint)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Oil for frying oil for frying Use less oil for a lighter option

Method
 

Preparation
  1. Place grated zucchini in a clean kitchen towel and squeeze out excess moisture.
  2. In a large bowl, combine the grated zucchini, peas, flour, eggs, herbs, garlic powder, salt, and pepper. Mix until well combined.
Cooking
  1. Heat oil in a frying pan over medium heat.
  2. Scoop spoonfuls of the mixture into the pan and flatten slightly to form fritters.
  3. Cook for about 3-4 minutes on each side, or until golden brown.
  4. Remove from the pan and drain on paper towels. Serve warm.

Notes

For serving, pair with a light dip like Greek yogurt dip or a salad. Store cooked fritters in an airtight container in the fridge for up to 3 days. They freeze well for up to 2 months.
