Witches Brew

Ingredients
  

For the Blackberry Syrup
  • 1 cup fresh or frozen blackberries Use fresh for the best flavor, but frozen works as well.
  • 2 sprigs fresh rosemary Adds a unique herbal hint.
  • 1 cup water
  • 1 cup granulated sugar To sweeten the syrup.
For the Drink
  • 1/4 cup blackberry simple syrup Use the syrup made above.
  • 1.5 cups pomegranate juice
  • 12 ounces mezcal About 1 1/2 cups.
  • 1 Tbsp orange bitters For added depth of flavor.
  • 3 cups seltzer water To give the drink a refreshing sparkle.
Garnishes
  • 1 sprig rosemary For garnish.
  • as needed fresh blackberries For garnish.

Method
 

Preparation of Blackberry Syrup
  1. Combine the blackberries, rosemary, water, and sugar in a saucepan. Place the saucepan over medium-high heat.
  2. Let the mixture come to a boil. After it boils, reduce the heat to a simmer and cook for about 2 minutes.
  3. Remove the saucepan from heat. Cover it and let it steep for 10 minutes.
  4. Strain the mixture using a fine mesh strainer to remove the solids. Let the syrup cool completely.
Mixing the Drink
  1. In a large pitcher, combine 1/4 cup of cooled blackberry simple syrup, pomegranate juice, mezcal, and orange bitters. Mix well.
  2. Put the pitcher in the refrigerator to chill until ready to serve.
  3. When ready to serve, fill glasses with ice and pour the Witches Brew over the ice.
  4. Top each glass with seltzer water and stir gently to mix everything.
  5. Garnish each glass with a sprig of rosemary and a few fresh blackberries.

Notes

Best served cold. Can be made ahead with the syrup prepared in advance. Adapt to create non-alcoholic versions or experiment with different fruits and herbs.
