  • 1 8-ounce wheel Brie cheese
  • 1/2 cup cranberry sauce Use low-sugar or sugar-free for a lighter option.
  • 1/4 cup chopped pistachios Optional
  • 1 sprig fresh rosemary For garnish, optional

Method
 

Preparation
  1. Preheat your oven to 350°F.
  2. Using a sharp knife, carefully slice the Brie wheel in half horizontally to create two equal-sized rounds.
  3. Place both rounds on a cutting board, rind side down.
  4. Spread half of the cranberry sauce on one side of the Brie, then place the second round of Brie on top to create a 'sandwich.'
  5. Place the assembled Brie sandwich into a small cast iron skillet or baking dish. Top with the remaining cranberry sauce.
Baking
  1. Bake for 10-15 minutes or until the cheese begins to melt but is not completely melted.
  2. Remove from the oven and garnish with chopped pistachios and fresh rosemary sprigs, if desired.
  3. Serve immediately with sliced apples or crackers for dipping.

Notes

Serve warm for the best experience. For lighter serving, portion control is recommended. Can be prepped ahead and baked before serving.
