Main Ingredients
  • 2 cups frozen butternut squash Can substitute with fresh butternut squash.
  • 2 tablespoons nutritional yeast For a cheesy flavor; can be omitted.
  • 1 teaspoon smoked paprika Regular paprika can be used instead.
  • to taste Salt
  • to taste Pepper
  • to taste tablespoons Olive oil Optional, for drizzling.

Method
 

Cooking Pasta
  1. Cook the pasta according to package instructions.
Making the Sauce
  1. In a saucepan, combine frozen butternut squash with a little water and steam until tender.
  2. Drain excess water and blend squash with nutritional yeast, smoked paprika, salt, and pepper until smooth.
  3. In a skillet, heat the sauce over low heat.
Combining and Serving
  1. Add the cooked pasta to the skillet, tossing to coat with the sauce.
  2. Drizzle with olive oil if desired.
  3. Serve warm and enjoy!

Notes

You can add fresh herbs like sage or basil for garnish. For a crunchy texture, add toasted nuts. The sauce can also be frozen for later use.
