  • 1 cup whole milk or dairy free milk
  • 1 cup half and half or heavy cream for richer texture
  • 3 to 4 tablespoons maple syrup or honey to taste
  • 1 tablespoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cardamom
  • 1/8 teaspoon ground cloves
  • pinch black pepper for that signature chai kick
  • tiny pinch salt to round the flavors

Method
 

Preparation
  1. Warm the milk and cream in a small saucepan over low heat until steamy, not boiling.
  2. Whisk in maple syrup, vanilla, cinnamon, ginger, cardamom, cloves, pepper, and salt.
  3. Simmer very gently for 2 to 3 minutes, whisking often so the spices infuse without scalding.
  4. Remove from heat. Taste and adjust sweetness or spice. Strain through a fine sieve if desired.
  5. Cool to room temperature, then pour into a clean jar and refrigerate.

Notes

This creamer can be customized by making it dairy-free, adjusting sweeteners, and tweaking spices. It stores well in an airtight jar for about one week.
