Ingredients
  

For the Salad
  • 12 pieces mandarin oranges, divided for dressing and salad
  • 2 cups strawberries, sliced
  • 5 pieces kiwi, peeled and sliced
  • 1 piece pineapple, peeled, cored, cut into bite-size chunks
  • 3 pieces mangoes, peeled, pitted, cut into bite-size chunks
For the Dressing
  • 1 medium lemon
  • 1 piece lime
  • 1/4 cup honey
  • 1/2 teaspoon ginger paste, or grated fresh ginger
  • 1/2 teaspoon poppy seeds

Method
 

Preparation
  1. Wash and dry lemon, lime and 2 mandarin oranges. Zest the citrus and squeeze the juice into a measuring cup, adding honey, ginger, and poppy seeds. Whisk until combined and set aside.
  2. Slice strawberries and kiwi, section remaining oranges, and chop pineapple and mango. Place all fruit in a large bowl.
  3. Pour dressing on top of the fruit and toss gently to coat.
  4. Refrigerate for about 30 minutes before serving.

Notes

Store the salad in an airtight container in the fridge for up to two days. Keep the dressing separate for longer storage to maintain fruit texture.
