Ingredients
  

Main Ingredients
  • 1 loaf Trader Joe’s sun-dried tomato focaccia Soft and flavorful bread.
  • 7 ounces deli turkey Mild turkey, thinly sliced.
  • 1 large tomato, thinly sliced Fresh and juicy.
  • 1 handful greens (sprouts, microgreens, or spinach) For freshness and crunch.
  • few pieces thinly sliced red onion For added flavor.
Pesto Mayo
  • 1/4 cup mayo For creaminess.
  • 1/4 cup pesto Adds flavor and freshness.

Method
 

Preparation
  1. Preheat your oven to 400 degrees F.
  2. Place the focaccia loaf directly on the oven rack and toast for 5-8 minutes until warm and slightly crispy on the outside but still soft inside.
  3. While the bread toasts, mix the pesto and mayo together in a small bowl.
  4. Keep the bread flat on your cutting board and carefully slice horizontally through the center of the loaf.
Assembly
  1. Spread a generous layer of pesto mayo on the bottom half of the focaccia.
  2. Add turkey slices, followed by tomato slices, greens, and red onion.
  3. Dollop the pesto mayo directly on top of the greens and onions.
  4. Gently press the top piece of focaccia onto your sandwich.
  5. Use a large, sharp knife to cut the sandwich down the middle lengthwise, then make three cuts across for a total of 6 pieces.

Notes

Serve the sandwich warm or at room temperature with a side salad or chips. For a neater presentation, wipe the tomato slices dry with a paper towel and add greens last to keep them crisp.
