  • 2 oz vodka (use gluten free vodka if needed)
  • 1 oz fresh espresso, cooled (or strong coffee)
  • 0.75 oz coffee liqueur (or 0.5 oz + sugar-free syrup for lower sugar)
  • 0.5 oz toasted marshmallow syrup (or 0.5 oz simple syrup + 1 drop marshmallow extract)
  • 0.25 oz vanilla syrup (optional, choose sugar-free to cut calories)
  • Ice Ice
  • 1 large or mini marshmallow marshmallow for garnish
  • 1 scoop unflavored or vanilla protein powder (optional, for high protein version)
  • 1 oz egg white or aquafaba (optional, for foam) Skip for diabetic-friendly or low calorie

Method
 

Preparation
  1. Make fresh espresso and let it cool slightly. Strong cold brew or chilled espresso works too.
  2. If using protein powder, mix one scoop with 1 to 1.5 oz of warm water or unsweetened milk alternative until smooth. Let cool.
  3. Fill cocktail shaker half full with ice. Add vodka, espresso, coffee liqueur, toasted marshmallow syrup, vanilla syrup, and protein mix (if using).
  4. For a foamy top, add egg white or aquafaba. Do a dry shake first for 10 seconds, then add ice and shake vigorously for 15–20 seconds. If not using egg white, shake with ice for 20 seconds.
  5. Strain into a chilled martini or coupe glass using a fine mesh strainer.
  6. Toast a marshmallow on a skewer with a kitchen torch until golden brown, or use broiler/air fryer. Garnish the drink with the toasted marshmallow.
  7. Serve immediately and enjoy!

Notes

For a lower calorie version, use sugar-free syrups and reduce vodka. Serve with balanced snacks to make it part of a light meal.
