  • 4 sticks cinnamon sticks Use high-quality cinnamon for the best flavor.
  • 1 ¼ cups water
  • ¾ cup brown sugar (packed) Can adjust for sweetness.
  • ¼ cup granulated sugar Can adjust for sweetness.

Preparation
  1. Toast the cinnamon sticks in a small saucepan over medium heat, turning them every minute for about 5 minutes until fragrant and golden.
  2. Carefully pour in the water and add both sugars to the saucepan, stirring until completely dissolved.
  3. Bring the mixture to a gentle simmer and let it simmer for another 5 minutes.
  4. Remove from heat and let the cinnamon sticks steep in the syrup for about 10 minutes.
  5. Strain the syrup to remove the cinnamon sticks, transfer to a container, and refrigerate.

Notes

Store in an airtight container in the refrigerator for up to 2 weeks. Shake before use.
