Dry Ingredients
  • 1 cup all purpose flour
  • 2/3 cup yellow cornmeal
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp sea salt
Wet Ingredients
  • 1 cup buttermilk Use low-fat for a lighter version.
  • 0.5 cup sugar Can be reduced for a healthier version.
  • 0.25 cup melted butter, cooled Or use a lighter fat alternative.
  • 0.25 cup canola oil
  • 0.25 cup honey
  • 2 large eggs, room temperature Ensure eggs are at room temperature for smooth mixing.

Method
 

Preparation
  1. Preheat oven to 375 degrees F. Spray a 9x9 or 8x8 pan or cast iron skillet with non-stick spray.
  2. In a large bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt.
  3. In a smaller bowl, whisk together the buttermilk, sugar, melted butter, oil, honey, and eggs until well combined.
  4. Stir the wet ingredients into the dry ingredients until just combined.
  5. Pour the batter into the prepared pan.
Baking
  1. Bake at 375 degrees F for 27 to 32 minutes, or until a toothpick inserted in the middle comes out clean or with a few moist crumbs.
  2. Let it cool for 5 to 10 minutes before slicing and serving.

Notes

For extra crispiness, use a cast iron skillet and brush the top with butter before baking. Store in an airtight container for optimal freshness.
