  • 1 pound Chicken thighs You can also use chicken breasts.
  • 2 cups Rice Cook according to package instructions.
  • 1/2 cup Sweet chili sauce Adjust for spice preference.
  • 1/4 cup Soy sauce Use gluten-free if necessary.
  • 3 cloves Garlic Minced.
  • 1 tablespoon Ginger Grated.
  • 2 tablespoons Vegetable oil For frying.
Garnishes
  • 2 stalks Green onions Chopped, for garnish.
  • 1/4 cup Cilantro Optional, chopped for garnish.

Method
 

Preparation
  1. Cook the rice according to package instructions and set aside.
  2. In a bowl, mix sweet chili sauce, soy sauce, minced garlic, and grated ginger.
Cooking
  1. Heat vegetable oil in a skillet over medium-high heat.
  2. Add chicken thighs and cook until browned and cooked through.
  3. Pour the sauce mixture over the chicken and cook for an additional 2-3 minutes, allowing the sauce to thicken.
Serving
  1. Serve the chicken over rice, garnished with chopped green onions and cilantro if desired.

Notes

You can adjust the spice level by adding chili flakes or sriracha to the sauce. To make it vegetarian, swap tofu for chicken and cook until crispy.
