Ingredients
  

Main Ingredients
  • 1 large ripe mango, peeled, pitted and roughly chopped Ensure the mango is ripe for the best flavor.
  • 1/4 cup fresh lime juice (about 2 medium limes)
  • 1/4 cup fresh orange juice
  • 2 tablespoons honey Adjust for sweetness to taste.
  • 1/2 teaspoon ground cumin
  • 1 clove garlic Minced.
  • 1/2 teaspoon salt Adjust to taste.
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon finely chopped medium heat chili pepper (Fresno or jalapeƱo)
  • 2 tablespoons finely chopped cilantro Can be substituted with other herbs.
  • 1/3 cup extra virgin olive oil Added slowly for emulsification.

Method
 

Preparation
  1. Start by peeling and chopping the mango. Make sure it is ripe and sweet.
  2. Measure out all your other ingredients.
Blending
  1. Combine the chopped mango, lime juice, orange juice, honey, ground cumin, garlic, and salt in a blender container.
  2. Puree on medium speed until the mixture is smooth.
Mixing
  1. Pour the mango mixture into a medium-sized jar.
  2. Slowly add the olive oil in a steady stream while stirring with a fork or small whisk.
  3. Add the finely chopped chili pepper, cilantro, and black pepper. Stir to combine.
  4. Taste your dressing and adjust salt if needed.
Storage
  1. Seal the jar and store it in the refrigerator.
  2. Shake well before each use.

Notes

The dressing can last up to one week in the refrigerator. Shake before using.
