Ingredients
  

For the Quesadillas
  • 1 tablespoon vegetable oil For cooking vegetables
  • 1 cup diced onion Any variety
  • 1 cup diced bell pepper Red or green bell pepper
  • 2 each 8-inch flour tortillas Can substitute with whole wheat or corn tortillas for healthier options
  • 1 cup shredded cheese Oaxaca, Monterey Jack, or mozzarella
  • 2 cups chopped carne asada meat Cooked and seasoned meat
  • to taste salt and pepper For seasoning
  • to serve salsa or guacamole For dipping

Method
 

Preparation
  1. Heat a medium skillet over medium-high heat and add the vegetable oil.
  2. Toss in the diced onion and diced bell pepper, cooking for about 3-5 minutes until tender. Season with salt and pepper and set aside.
Assembly
  1. In a large skillet or comal, place one tortilla and layer half with cheese, followed by the sautéed veggies and carne asada.
  2. Fold the other half of the tortilla over the filling and press down gently.
Cooking
  1. Repeat the assembly with the remaining ingredients.
  2. Cook each quesadilla for 2-3 minutes on each side until the cheese melts and the tortillas turn golden brown.
  3. For the air fryer, preheat to 400°F (200°C) and cook assembled quesadillas for 5-6 minutes until crispy.
Serving
  1. Cut the quesadillas into wedges and serve hot with salsa or guacamole.

Notes

Pair the quesadillas with a side salad of mixed greens, tomatoes, and a light vinaigrette for added nutrition. Store in the refrigerator for up to three days and freeze for up to three months if needed.
