Preparation
- Heat a medium skillet over medium-high heat and add the vegetable oil.
- Toss in the diced onion and diced bell pepper, cooking for about 3-5 minutes until tender. Season with salt and pepper and set aside.
Assembly
- In a large skillet or comal, place one tortilla and layer half with cheese, followed by the sautéed veggies and carne asada.
- Fold the other half of the tortilla over the filling and press down gently.
Cooking
- Repeat the assembly with the remaining ingredients.
- Cook each quesadilla for 2-3 minutes on each side until the cheese melts and the tortillas turn golden brown.
- For the air fryer, preheat to 400°F (200°C) and cook assembled quesadillas for 5-6 minutes until crispy.
Serving
- Cut the quesadillas into wedges and serve hot with salsa or guacamole.
Notes
Pair the quesadillas with a side salad of mixed greens, tomatoes, and a light vinaigrette for added nutrition. Store in the refrigerator for up to three days and freeze for up to three months if needed.
