  • 1 cup Dipping sauce Optional, such as yogurt-based dip
  • 1/2 cup Sour cream Optional for serving

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Wash the baby potatoes and pat them dry.
  3. In a bowl, toss the potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper.
  4. Spread the potatoes on a baking sheet in a single layer.
Cooking
  1. Roast in the preheated oven for about 25-30 minutes, or until tender and golden brown.
  2. Serve warm with a dipping sauce or a dollop of sour cream.

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator. You can reheat them in the oven or a skillet to restore crispiness.
