Ingredients
  

For the Pinwheels
  • 1 cup spinach, chopped Fresh spinach, chopped
  • 1 cup feta cheese, crumbled Feta cheese adds creaminess and flavor
  • 1 package puff pastry or tortillas Use puff pastry for baking or tortillas for a no-bake version
  • 1/2 cup cream cheese Softened cream cheese helps bind the ingredients
  • 2 cloves garlic, minced Minced garlic adds flavor
  • to taste Salt and pepper Adjust seasoning to your preference

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C) if using puff pastry.
  2. In a bowl, mix the chopped spinach, feta cheese, cream cheese, minced garlic, salt, and pepper.
  3. Roll out the puff pastry or tortillas.
  4. Spread the spinach and feta mixture evenly over the pastry or tortilla.
  5. Roll tightly and slice into pinwheels.
Cooking
  1. If using puff pastry, place on a baking sheet and bake for 15-20 minutes until golden brown.
  2. If using tortillas, simply serve as is or lightly toast on a pan for a warm option.

Notes

For serving, consider cutting the pinwheels into smaller bite-sized pieces. Serve plain or with a light vinaigrette or yogurt dip. Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
