Ingredients

  • 1 cup passion fruit pulp (fresh or canned)
  • 3/4 cup silver tequila adjust to taste
  • 1/2 cup orange liqueur (Cointreau or triple sec) or use orange extract for lower sugar
  • 1/2 cup fresh lime juice (about 4 limes)
  • 3 tablespoons agave syrup or 2 tablespoons sugar-free sweetener syrup for low calorie/low carb version
  • 1 small jalapeño, sliced remove seeds for less heat
  • Ice cubes
  • Lime wedges and salt or chili-salt for rim
  • Sparkling water (optional, to lengthen and lighten)

Method
 

Preparation
  1. Cut passion fruit and scoop pulp into a bowl. Squeeze fresh lime juice. Slice jalapeño thinly.
Mixing
  1. In a shaker, add 3-4 jalapeño slices and the sweetener. Gently muddle for 10–15 seconds to release a light heat.
  2. Pour in passion fruit pulp, lime juice, tequila, and orange liqueur or extract. Add ice to fill the shaker.
  3. Seal the shaker and shake hard for 15–20 seconds until cold.
  4. Strain into a glass with fresh ice. For a seed-free drink, pass the mixture through a fine mesh strainer.
  5. Rub a lime wedge around the glass rim and dip in salt or chili-salt. Garnish with a lime wheel and a slice of jalapeño.
Serving
  1. Serve this margarita cold in small glasses. For portion control, keep servings to 4–6 ounces per person.
  2. Serve with a wedge of lime and a small side of fresh fruit like pineapple or cucumber slices.
  3. Pair the margarita with a high protein meal like grilled shrimp tacos or a salad with beans and avocado.

Notes

Store mixer in an airtight jar in the fridge for up to 4 days. For low carb version, choose sugar-free syrup. Optional to add unflavored collagen peptides for protein boost.
