Ingredients
  

Dry Ingredients
  • 225 g self-raising flour
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
Wet Ingredients
  • 1 large egg
  • 300 ml milk
  • 2 tablespoons melted butter Plus extra for cooking

Method
 

Preparation
  1. In a mixing bowl, combine the self-raising flour, sugar, salt, and baking powder. Stir them well to mix everything evenly.
  2. In another bowl, beat the large egg. Then add the milk and the melted butter to the egg. Mix these liquids together until they are well blended.
  3. Gradually pour the wet mixture into the dry ingredients. Stir gently until the batter is smooth. Avoid over-mixing; small lumps are okay.
Cooking
  1. Place your griddle or frying pan over medium heat. Add a little butter to the pan to prevent sticking.
  2. Scoop a small amount of batter (about 2 tablespoons) onto the hot pan. Cook for about 2-3 minutes until you see small bubbles appearing on the surface.
  3. Once you see bubbles, use a spatula to flip the pancake. Cook for another 1-2 minutes until it turns golden brown.
  4. Continue cooking with the remaining batter, adding more butter to the pan as needed.
  5. Place your cooked Scotch pancakes on a plate and serve warm.

Notes

Enjoy the pancakes with syrup, fresh fruits, yogurt, or jam. For storage, keep them in an airtight container in the fridge for up to 2 days or freeze them with parchment paper in between for up to 2 months. Reheat them using a microwave or toaster.
