Preparation
- In a mixing bowl, combine the self-raising flour, sugar, salt, and baking powder. Stir them well to mix everything evenly.
- In another bowl, beat the large egg. Then add the milk and the melted butter to the egg. Mix these liquids together until they are well blended.
- Gradually pour the wet mixture into the dry ingredients. Stir gently until the batter is smooth. Avoid over-mixing; small lumps are okay.
Cooking
- Place your griddle or frying pan over medium heat. Add a little butter to the pan to prevent sticking.
- Scoop a small amount of batter (about 2 tablespoons) onto the hot pan. Cook for about 2-3 minutes until you see small bubbles appearing on the surface.
- Once you see bubbles, use a spatula to flip the pancake. Cook for another 1-2 minutes until it turns golden brown.
- Continue cooking with the remaining batter, adding more butter to the pan as needed.
- Place your cooked Scotch pancakes on a plate and serve warm.
Notes
Enjoy the pancakes with syrup, fresh fruits, yogurt, or jam. For storage, keep them in an airtight container in the fridge for up to 2 days or freeze them with parchment paper in between for up to 2 months. Reheat them using a microwave or toaster.
