  • 1 can (20 oz) crushed pineapple, drained
  • 1 cup sugar
  • 1/2 cup butter, melted
  • 1 cup crushed Ritz crackers additional for topping
  • 1/2 cup shredded coconut (optional) for added flavor
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the drained crushed pineapple with the sugar, melted butter, beaten egg, and vanilla extract. Make sure everything is mixed well.
  3. Stir in the crushed Ritz crackers and the shredded coconut if you’re using it.
  4. Pour the mixture into a greased baking dish, spreading it evenly for uniform cooking.
  5. Top with the remaining crushed crackers to create a crunchy topping.
Baking
  1. Bake in the preheated oven for 30-35 minutes, or until the casserole is golden brown and bubbly.
