  • 1 pound fresh carrots, peeled and sliced into 1/4-inch thick rounds
  • 1/4 cup packed brown sugar (dark or light)
  • 2 tablespoons unsalted butter, cut into pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup water

Preparation
  1. Peel and slice fresh carrots into 1/4-inch rounds.
Cooking
  1. Place a large skillet over medium heat and add unsalted butter; let it melt completely.
  2. Add the sliced carrots and water to the pan, stir to combine, and cover with a lid. Steam for 5-7 minutes, stirring occasionally.
  3. Remove the lid, sprinkle brown sugar, add salt and pepper, and stir gently.
  4. Cook uncovered, stirring occasionally, for 4-5 minutes until the sugar melts and thickens into a glaze.
  5. In the last minute, add optional cinnamon or orange juice and stir well.
  6. Remove from heat, transfer to a serving dish, and serve warm.

Notes

These glazed carrots can be paired with grilled chicken or fish for added protein. They can also be stored in the fridge for up to 3 days or frozen for up to two months.
