Ingredients
  

Pasta and Feta
  • 300 g conchiglie pasta Shell-shaped pasta
  • 200 g feta cheese Crumbled or cubed for roasting
Sauce Ingredients
  • 2 tablespoons olive oil For drizzling over feta
  • 1 piece lemon Zested and juiced
  • 1-2 pieces red chillies Finely chopped; adjust for spiciness
  • a handful fresh mint leaves Chopped
  • Salt and pepper To taste

Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the conchiglie pasta according to package instructions. Once done, drain and set aside.
  3. In a baking dish, place the feta cheese and drizzle with olive oil. Sprinkle with salt and pepper.
Cooking
  1. Roast the feta in the oven for about 20 minutes, or until soft and slightly golden.
  2. In a small bowl, mix together the lemon zest, lemon juice, chopped chili, and chopped mint.
  3. Once the feta is done roasting, gently mix the warm pasta with the feta and the sauce mixture until well combined.
  4. Serve warm or at room temperature.

Notes

Roasted Feta Conchiglie can be enjoyed warm or cold. Garnish with extra mint leaves and a sprinkle of red chili. Pairs well with a side salad or crusty bread. Leftovers can be stored in an airtight container for about 3 days in the fridge.
