Preparation
- Preheat your oven to 180°C (350°F).
- Fill a large pot with water, add a pinch of salt, and bring it to a boil. Cook the conchiglie pasta according to package instructions. Once done, drain and set aside.
- In a baking dish, place the feta cheese and drizzle with olive oil. Sprinkle with salt and pepper.
Cooking
- Roast the feta in the oven for about 20 minutes, or until soft and slightly golden.
- In a small bowl, mix together the lemon zest, lemon juice, chopped chili, and chopped mint.
- Once the feta is done roasting, gently mix the warm pasta with the feta and the sauce mixture until well combined.
- Serve warm or at room temperature.
Notes
Roasted Feta Conchiglie can be enjoyed warm or cold. Garnish with extra mint leaves and a sprinkle of red chili. Pairs well with a side salad or crusty bread. Leftovers can be stored in an airtight container for about 3 days in the fridge.
