Ingredients
  

For the Red Velvet Syrup
  • 2 teaspoons granulated sugar Adjust to taste
  • 1 teaspoon unsweetened cocoa powder Dutch process or natural both work
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt To balance sweetness
  • 2 to 3 drops red food coloring Optional, for that signature look
  • 1 tablespoon hot water Add more if needed to reach a syrupy consistency
For the Latte
  • 2 shots espresso or 1/2 cup very strong brewed coffee
  • 3/4 cup milk Dairy or non-dairy; whole milk foams best
  • 1 tablespoon softened cream cheese Optional for cream cheese foam
  • 1 tablespoon milk For cream cheese foam
  • 1 teaspoon sugar For cream cheese foam
  • 1 splash vanilla For cream cheese foam
  • 1 dollop whipped cream To finish
  • 1 dash cocoa powder To dust on top

Method
 

Make the Red Velvet Syrup
  1. In a small mug or heatproof cup, stir together cocoa, sugar, vanilla, and a pinch of salt.
  2. Add 1 tablespoon hot water and whisk until smooth. This is your quick red velvet base.
  3. Add 2 to 3 drops red food coloring if using and give it a stir. If it looks thick, add another teaspoon of hot water until glossy.
Build and Finish the Latte
  1. Pull 2 shots of espresso or pour in strong brewed coffee. Swirl to combine with the syrup.
  2. Heat and froth 3/4 cup milk until hot and foamy.
  3. Pour the milk over the coffee and syrup, holding back foam with a spoon, then spoon the foam on top.
  4. Optional cream cheese foam: whisk softened cream cheese, 1 tablespoon milk, 1 teaspoon sugar, and a splash of vanilla until smooth. Spoon gently over the foam.
  5. Finish with a small dollop of whipped cream and a light sprinkle of cocoa powder.

Notes

Use good cocoa for a richer flavor. You can pre-mix the cocoa, sugar, and vanilla for convenience. Adjust sweetness to your taste.
