- In a large pot over medium-high heat, combine apple cider, pumpkin puree, brown sugar, and pumpkin pie spice.
- Bring the mixture to a boil, stirring occasionally.
- Once boiling, reduce the heat to a simmer.
- Let it simmer for about 10 to 15 minutes while stirring from time to time.
- After simmering, remove the pot from heat and stir in the vanilla.
- Allow the mixture to cool completely.
- Chill the juice in the refrigerator before serving in glasses filled with ice.
- If you prefer it warm, you can reheat it gently before serving.
Notes
Pumpkin juice can be served warm or cold. Top with a cinnamon stick for decoration. Leftover juice can be stored in the refrigerator for 3 to 5 days or frozen for up to 6 months.
