Ingredients
  

Main Ingredients
  • ¼ cup pomegranate juice Use fresh juice for best flavor.
  • ½ quantities lime, cut in wedges Adjust to taste.
  • 6 to 8 leaves mint leaves Clap to release the scent.
  • 1 cup soda water or ginger ale Use soda water for lower calories.
  • to taste non-alcoholic rum Optional for added flavor.
  • to taste sweetener Optional, choose low-calorie sweeteners if preferred.

Method
 

Preparation
  1. Place lime wedges, sweetener (if using), and pomegranate juice in a tall glass.
  2. Muddle gently until all the juice has been pressed out of the lime.
  3. Clap mint leaves together in your hands to release the scent and add them to the glass.
  4. Give the mint a gentle press a couple of times with the muddler.
  5. Add plenty of ice to the glass and top with soda water or ginger ale.
  6. Stir well to combine all ingredients.
  7. Garnish your mocktail with pomegranate seeds, mint, and a lime wedge.

Notes

Best enjoyed fresh. Store leftovers in the refrigerator for up to 2 days but be aware it may lose fizz. You can make a larger batch for gatherings but add soda just before serving to maintain fizziness.
