Ingredients
  

For the Strawberry Juice
  • 1.5 cups water
  • 1 cup white grape juice
  • 1 cup sliced/hulled fresh strawberries plus 2 tbsp for garnish
  • 0.25 cups granulated sugar adjustable to taste
  • 1 tsp lemon juice
  • 0.5 tsp acai powder may not fully dissolve
  • 0.5 tsp passion fruit powder
  • 0.5 tsp citric acid
For the Pink Drink
  • 0.5 cups Strawberry Acai Refresher Base
  • 0.5 cups sweetened coconut milk or non-dairy alternatives
  • 2 tbsp sliced/hulled fresh strawberries for garnish
  • to taste ice for serving

Method
 

Preparation
  1. In a medium saucepan, combine water, white grape juice, 1 cup of sliced strawberries, and granulated sugar. Stir well.
  2. Heat on medium-high until it simmers, then reduce to low and let simmer for about 10 minutes.
  3. Remove from heat and strain the mixture using a fine mesh strainer, pressing down on the strawberries to extract as much juice as possible. Discard the pulp.
  4. Return the strained juice to the saucepan over low heat. Whisk in lemon juice, acai powder, passion fruit powder, and citric acid until combined.
  5. Remove from heat and let the mixture cool completely in a large jar.
Mixing and Serving
  1. In a cocktail shaker or large jar, combine ½ cup of the Strawberry Acai Refresher Base with ½ cup of sweetened coconut milk. Shake well to combine.
  2. Fill a tall glass with ice and pour the pink drink mixture over the ice.
  3. Garnish with the reserved fresh strawberry slices and enjoy!

Notes

Store any leftover Pink Drink in an airtight container in the refrigerator for 3-4 days. Mix with fresh coconut milk before serving again. Don't freeze the drink as it may affect texture.
