  • 4 cups fresh pineapple chunks (or 1 whole fresh pineapple) Use very ripe pineapple for the best flavor.
  • 4 cups cold water
  • 4 Tbsp white sugar Adjust to taste or substitute with a calorie-free sweetener.

Method
 

Preparation
  1. Cut the pineapple into chunks.
  2. Place the pineapple chunks in a blender with 1 or 2 cups of water and blend until smooth, about 1 minute.
  3. Strain the mixture into a bowl to transfer the pineapple water to a pitcher, or keep the pulp if desired.
  4. Add the remaining water and sugar, and mix well.
  5. Taste and adjust sugar or water if needed.
  6. Serve over ice.

Notes

Store in a covered pitcher in the fridge for up to 3-4 days. Stir before serving as separation can occur. Freezing in ice cube trays is also an option for later use.
