Preparation
- Cut the pineapple into chunks.
- Place the pineapple chunks in a blender with 1 or 2 cups of water and blend until smooth, about 1 minute.
- Strain the mixture into a bowl to transfer the pineapple water to a pitcher, or keep the pulp if desired.
- Add the remaining water and sugar, and mix well.
- Taste and adjust sugar or water if needed.
- Serve over ice.
Notes
Store in a covered pitcher in the fridge for up to 3-4 days. Stir before serving as separation can occur. Freezing in ice cube trays is also an option for later use.
