Ingredients
  

Spices
  • 2 tablespoons mustard seed
  • 1 tablespoon whole allspice
  • 2 teaspoons coriander seeds
  • 2 whole cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon crushed red pepper flakes
  • 1 bay leaf crumbled bay leaf
  • 1 stick cinnamon stick (2 inches)

Method
 

Preparation
  1. Measure all spices.
  2. Optional: Dry-toast the mustard seed, allspice, and coriander in a skillet over medium heat for 1 to 2 minutes, shaking the pan to prevent burning.
  3. Cool the toasted spices on a plate for a few minutes.
  4. If desired, lightly crush the seeds and cinnamon stick using a spice grinder or mortar and pestle.
  5. Mix all the ingredients in a small bowl until evenly combined.
  6. Combine the ingredients and store in an airtight jar or container.

Notes

Store your Pickling Spice Mix in an airtight jar in a cool, dark place. It will stay fresh for 6 to 12 months. Freezing is not recommended as it can reduce flavor.
