  • 1 pound medium apples, cored (about 2 apples)
  • 1/2 cup water
  • 1/2 cup honey
  • 1/2 cup white wine vinegar
Spices
  • 3 whole star anise
  • 3 pods cardamom
  • 2 sticks cinnamon (3 inches)
  • 1 teaspoon kosher salt
  • 1 teaspoon whole allspice
  • 1 to 2 leaves bay leaves
  • 1 teaspoon whole peppercorns

Preparation
  1. Use a mandoline or vegetable peeler to cut the apples into very thin slices.
  2. Place the sliced apples into a clean 1-quart jar.
  3. In a large saucepan, combine the water, honey, white wine vinegar, star anise, cardamom pods, cinnamon sticks, kosher salt, allspice, bay leaves, and peppercorns. Bring this mixture to a boil over medium-high heat.
  4. Once the mixture reaches a boil, carefully ladle the hot liquid over the apples in the jar, ensuring all slices are submerged.
  5. Cover the jar with a lid and allow it to cool to room temperature, then place it in the refrigerator.
  6. Let the apples marinate overnight for the best flavor.

Notes

Pickled apples can be refrigerated for up to 2 weeks. They can be served in salads, on sandwiches, or enjoyed straight from the jar. These can become a delightful and nutritious snack option.
