  • 6 pieces hard-boiled eggs Peeled and halved
  • 1/4 cup mayonnaise Can swap for Greek yogurt for a healthier option
  • 2 tablespoons pickle relish
  • 1 teaspoon Dijon mustard
  • to taste Salt
  • to taste Pepper
For Garnish
  • to taste Chopped fresh dill or parsley
  • optional slices sliced pickles For garnish

Method
 

Preparation
  1. Peel the hard-boiled eggs and cut them in half lengthwise.
  2. Remove the yolks and place them in a bowl.
  3. Mash the egg yolks with a fork.
  4. Add mayonnaise, pickle relish, Dijon mustard, salt, and pepper to the mashed yolks and mix until smooth.
  5. Spoon or pipe the egg yolk mixture back into the egg white halves.
  6. Garnish with chopped fresh dill or parsley and sliced pickles if desired.
  7. Serve cold.

Notes

These deviled eggs keep well in the refrigerator for 3 to 4 days in an airtight container. They are great for meal prep and can be enjoyed with crunchy vegetables or salads to enhance nutrition.
