Preparation
- Peel the hard-boiled eggs and cut them in half lengthwise.
- Remove the yolks and place them in a bowl.
- Mash the egg yolks with a fork.
- Add mayonnaise, pickle relish, Dijon mustard, salt, and pepper to the mashed yolks and mix until smooth.
- Spoon or pipe the egg yolk mixture back into the egg white halves.
- Garnish with chopped fresh dill or parsley and sliced pickles if desired.
- Serve cold.
Notes
