Ingredients
  

For the mascarpone cold foam
  • 1 tbsp mascarpone cheese
  • 2 tbsp heavy cream
  • 1 tbsp whole milk
  • 1 tbsp vanilla syrup
For the coffee mixture
  • 3/4 cup whole milk
  • 1 tbsp vanilla syrup
  • 2 tsp unsweetened cocoa powder plus more for dusting
  • 1/4 tsp rum extract optional
  • 2 oz espresso or 8 oz freshly brewed coffee
  • 1 piece lady finger optional for garnish

Method
 

Preparation of Cold Foam
  1. Place the mascarpone cheese in a microwave-safe jar or container. Microwave it for 5 seconds until softened.
  2. Add heavy cream, whole milk, and vanilla syrup to the softened mascarpone. Use a milk frother to blend until smooth and creamy. Set aside.
Preparation of Coffee Mixture
  1. In a small saucepan, combine whole milk, vanilla syrup, cocoa powder, and rum extract (if using). Heat over low heat, whisking continuously until warm and steaming, avoiding boiling.
Assembling the Latte
  1. Brew your coffee or espresso into a large mug.
  2. Pour the warm chocolate milk mixture over the brewed coffee.
  3. Top the drink with the mascarpone cold foam. Dust with extra cocoa powder and garnish with a lady finger if desired.

Notes

The latte can be served hot or cold. For a hot latte, serve immediately; for cold, allow to cool before adding ice. Store components separately in the fridge for up to 2 days.
