Ingredients
  

For the mocktail
  • 2 teabags 2 Peppermint teabags
  • 1 cup 1 Cup boiling water Use freshly boiled water.
  • 2 teaspoons 2 teaspoon lemon zest Freshly zested lemon is recommended.
  • 2 tablespoons 2 tablespoon lemon juice Freshly squeezed juice is best.
  • 2 teaspoons 2 teaspoon honey (optional) Can be replaced with a sugar-free sweetener.
  • to top ml Soda water Add just before serving for fizz.

Method
 

Preparation
  1. Place the teabags, boiling water, and honey in a jug and brew according to packet instructions.
  2. Remove the teabags and chill the tea in the fridge.
  3. Zest and juice the lemon.
  4. Mix the chilled tea, lemon zest, and lemon juice in a jug. Stir well.
  5. Divide between 2 ice-filled glasses and top with soda water.
  6. Garnish with extra lemon slices and serve.

Notes

Store brewed tea in the fridge for up to 3 days, adding soda water just before serving. For best flavor, consume within 24 hours after adding fresh lemon.
