Ingredients for the Mocktail
  • 2 oz peach puree Use ripe peaches for best flavor or thawed frozen peaches.
  • 1 oz lemon juice
  • 6 to 8 leaves basil
  • 1/2 teaspoon honey Use a sugar-free syrup for a diabetic-friendly version.
  • 3 oz kombucha or soda water Use soda water for a low-calorie option.

Method
 

Preparation
  1. Place peach puree and lemon juice in a shaker. Add the basil and muddle gently.
  2. In a small microwave-safe dish, place the honey with half a teaspoon of water and microwave for a maximum of 5 seconds to create a honey syrup.
  3. Mix the honey with a spoon to dissolve and add it to the shaker with some ice.
  4. Shake well and strain the mixture over ice.
  5. Top the drink with your choice of kombucha or soda water.
  6. Garnish with edible flowers, basil, or sliced peach.

Notes

Serve in a chilled glass with fresh ice. For a lighter drink, keep honey to a half teaspoon or less using soda water.
