Prepare the Base
- In a medium saucepan, combine water, white grape juice, pineapple chunks, and granulated sugar. Stir well to ensure sugar dissolves.
- Heat over medium heat until the mixture begins to simmer, then reduce heat and let simmer for about 10 minutes.
- After simmering, strain the liquid to remove pineapple chunks, squeezing lightly to extract as much liquid as possible.
Mix Additives
- Pour the strained liquid back into the saucepan. Over low heat, whisk in passionfruit powder and citric acid until fully dissolved.
- Remove saucepan from heat and transfer the liquid into a large jar. Allow to cool completely.
Prepare and Serve
- In a cocktail shaker or large jar, add ½ cup of cooled pineapple mixture and ½ cup of sweetened coconut milk. Shake until well combined.
- Fill tall glasses with ice and pour Paradise Drink over the ice, gently stirring. Garnish with freeze-dried pineapple pieces.
