  • 1.5 cups water For the base mixture.
  • 1 cup white grape juice For sweetness and flavor.
  • 1.5 cups fresh or frozen pineapple chunks Fresh is preferred for better taste.
  • 0.33 cups granulated sugar Adjust according to taste.
  • 1 tbsp passionfruit powder Adds a unique tang.
  • 0.5 tsp citric acid For acidity and brightness.
Final Drink Components
  • 0.5 cups Pineapple Passionfruit Refresher Base To create the refreshing base.
  • 0.5 cups sweetened coconut milk For creaminess.
  • 1 tbsp freeze-dried pineapple pieces For garnish.
  • Ice Ice For serving.

Method
 

Prepare the Base
  1. In a medium saucepan, combine water, white grape juice, pineapple chunks, and granulated sugar. Stir well to ensure sugar dissolves.
  2. Heat over medium heat until the mixture begins to simmer, then reduce heat and let simmer for about 10 minutes.
  3. After simmering, strain the liquid to remove pineapple chunks, squeezing lightly to extract as much liquid as possible.
Mix Additives
  1. Pour the strained liquid back into the saucepan. Over low heat, whisk in passionfruit powder and citric acid until fully dissolved.
  2. Remove saucepan from heat and transfer the liquid into a large jar. Allow to cool completely.
Prepare and Serve
  1. In a cocktail shaker or large jar, add ½ cup of cooled pineapple mixture and ½ cup of sweetened coconut milk. Shake until well combined.
  2. Fill tall glasses with ice and pour Paradise Drink over the ice, gently stirring. Garnish with freeze-dried pineapple pieces.
  3. Enjoy your homemade Paradise Drink, savoring the tropical flavors!

Notes

For a festive presentation, consider adding a straw or cocktail umbrella. Store leftover mixture without coconut milk in the refrigerator for up to a week.
