Method
Poach the Pears
- In a medium pot, add water, cardamom pods (or ground cardamom), and sugar if you are using it. Bring this mixture to a simmer over medium heat. Add the diced pears. Cover the pot and let the pears cook for about 5-7 minutes until they are tender. Once done, remove them from the heat and let them cool.
Prepare the Oats
- In a bowl or container, add the rolled oats, milk, maple syrup or honey (if you are using it), salt, and vanilla extract. Stir the mixture well to combine everything.
Combine
- Once the pears have cooled, mix them into the oat mixture. Stir gently to ensure the pears are evenly distributed.
Chill
- Cover the container with a lid and place it in the refrigerator overnight. This allows the oats to absorb the liquid and the flavors to meld together.
Serve
- In the morning, take the overnight oats from the refrigerator. Stir well before serving. Top with peanut butter and a generous sprinkle of granola. Add fresh fruit if desired.
Notes
These overnight oats can be stored in an airtight container in the refrigerator for up to 4 days. It's best to keep the granola separate and add it just before serving to maintain its crunchiness.
