Ingredients
  

For the Overnight Oats
  • 1 cup rolled oats
  • 2 cups milk (dairy or plant-based)
  • 1 tablespoon maple syrup or honey (optional)
  • 1 pinch salt
  • ½ teaspoon vanilla extract
For the Cardamom-Poached Pears
  • 2 ripe pears peeled and diced
  • 2 cups water
  • 2-3 pods cardamom (or ½ teaspoon ground cardamom)
  • 1 tablespoon sugar (optional)
For Assembly
  • 2 tablespoons peanut butter
  • 1 cup granola
  • Fresh fruit for garnish (optional)

Method
 

Poach the Pears
  1. In a medium pot, add water, cardamom pods (or ground cardamom), and sugar if you are using it. Bring this mixture to a simmer over medium heat. Add the diced pears. Cover the pot and let the pears cook for about 5-7 minutes until they are tender. Once done, remove them from the heat and let them cool.
Prepare the Oats
  1. In a bowl or container, add the rolled oats, milk, maple syrup or honey (if you are using it), salt, and vanilla extract. Stir the mixture well to combine everything.
Combine
  1. Once the pears have cooled, mix them into the oat mixture. Stir gently to ensure the pears are evenly distributed.
Chill
  1. Cover the container with a lid and place it in the refrigerator overnight. This allows the oats to absorb the liquid and the flavors to meld together.
Serve
  1. In the morning, take the overnight oats from the refrigerator. Stir well before serving. Top with peanut butter and a generous sprinkle of granola. Add fresh fruit if desired.

Notes

These overnight oats can be stored in an airtight container in the refrigerator for up to 4 days. It's best to keep the granola separate and add it just before serving to maintain its crunchiness.
