Overnight Cheesy Breakfast Casserole

Ingredients
  

Casserole Base
  • 4 cups cubes left over biscuits You can use store-bought or homemade biscuits.
  • 1 pound sage breakfast sausage, cooked Can substitute with turkey sausage or crumbled bacon.
  • 2 cups cubed ham Optional, can omit for vegetarian version.
  • 1/2 each red bell pepper, chopped Adds flavor and color.
  • 1 cup shredded Parmesan cheese For richness.
  • 12 large eggs Beaten to form the custard base.
  • 2 cups milk You can use plant-based milk for dairy-free.
  • 1 teaspoon black pepper
  • 1/2 teaspoon kosher salt
  • 8 ounces mild cheddar, shredded Can be substituted with other cheese types.
  • 1 tablespoon butter Used for greasing the baking dish.
  • to taste chopped scallions For garnish.

Method
 

Preparation
  1. Butter a 9x13 or similar size baking pan.
  2. Evenly place biscuits in the pan.
  3. Add sausage, ham, peppers and Parmesan cheese in an even layer over the top.
  4. In a medium mixing bowl, combine eggs, milk, salt and pepper. Beat with a fork until well combined.
  5. Evenly pour the egg mixture over the top of the casserole.
  6. Cover with aluminum foil and chill in the refrigerator overnight.
Cooking
  1. Preheat oven to 350°F.
  2. Remove casserole from refrigerator and place the cold covered casserole in preheated oven.
  3. Bake for 45 minutes.
  4. Remove aluminum foil. Scatter cheddar cheese over the top and bake for an additional 15-30 minutes until casserole is set.
  5. Allow casserole to cool for 10 minutes before serving.
  6. Sprinkle with scallions and serve hot or warm.

Notes

To freeze, cool completely and wrap tightly before storing. This dish may last up to 4 days in the fridge. Reheat slices as needed, preferably in the oven.
