  • 2 cups all-purpose flour
  • 1 cup whole wheat flour
  • 1.5 cups sourdough starter
  • 1 cup water
  • 0.25 cup mixed nuts (e.g., walnuts, almonds)
  • 0.25 cup dried fruit (e.g., raisins, cranberries)
  • 1 tablespoon honey or sugar
  • 1 teaspoon salt

Method
 

Preparation
  1. In a large bowl, combine the all-purpose flour, whole wheat flour, and salt.
  2. Mix in the sourdough starter, water, and honey/sugar until a dough forms.
  3. Knead the dough on a lightly floured surface for about 10 minutes until smooth and elastic.
  4. Incorporate the nuts and dried fruit until evenly distributed.
  5. Place the dough in a greased bowl, cover, and let rise for about 2 hours or until doubled in size.
  6. Punch down the dough, shape it into a loaf, and place it in a greased loaf pan.
  7. Cover and let rise for another 1 hour.
  8. Preheat the oven to 350°F (175°C).
  9. Bake the bread for 28 to 40 minutes, or until golden brown and sounds hollow when tapped.
  10. Allow to cool before slicing.

Notes

Store in an airtight container at room temperature for up to 5 days, or slice and freeze for longer storage. Top with nut butter, Greek yogurt, or fresh fruits for added nutrition.
