Preparation
- In a large bowl, mix the bread flour, whole wheat flour, and salt.
- In a separate bowl, combine the water and sourdough starter.
- Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
- Knead for about 10 minutes until the dough is smooth.
- Fold in the mixed nuts and dried fruits.
- Place the dough in a lightly greased bowl, cover, and let it rise for about 2 hours, or until doubled in size.
- Preheat the oven to 450°F (232°C).
Baking
- Shape the dough into a loaf and place it in a floured proofing basket.
- Let it rest for 30 minutes.
- Transfer the loaf to a baking sheet and score the top with a sharp knife.
- Bake for 28 to 40 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
- Allow to cool before slicing.
Notes
For a healthy touch, consider spreading a light layer of almond butter or homemade fruit preserves on top. Store in a bread bag or wrap in a towel for best freshness.
