  • 3 cups bread flour
  • 1 cup whole wheat flour
  • 1.5 cups water
  • 0.5 cup sourdough starter
  • 1 teaspoon salt
  • 0.5 cup mixed nuts (e.g., walnuts, almonds)
  • 0.5 cup dried fruits (e.g., raisins, cranberries)

Method
 

Preparation
  1. In a large bowl, mix the bread flour, whole wheat flour, and salt.
  2. In a separate bowl, combine the water and sourdough starter.
  3. Gradually add the wet ingredients to the dry ingredients and mix until a dough forms.
  4. Knead for about 10 minutes until the dough is smooth.
  5. Fold in the mixed nuts and dried fruits.
  6. Place the dough in a lightly greased bowl, cover, and let it rise for about 2 hours, or until doubled in size.
  7. Preheat the oven to 450°F (232°C).
Baking
  1. Shape the dough into a loaf and place it in a floured proofing basket.
  2. Let it rest for 30 minutes.
  3. Transfer the loaf to a baking sheet and score the top with a sharp knife.
  4. Bake for 28 to 40 minutes, or until the loaf is golden brown and sounds hollow when tapped on the bottom.
  5. Allow to cool before slicing.

Notes

For a healthy touch, consider spreading a light layer of almond butter or homemade fruit preserves on top. Store in a bread bag or wrap in a towel for best freshness.
