Preparation of Lemon Oleo Saccharum
- Wash your lemons thoroughly.
- Carefully peel the lemons, avoiding too much of the white pith underneath.
- Place the lemon peel in a jar and add an equal amount of sugar by weight.
- Stir the sugar through the lemon peel and muddle a few times for better flavor infusion.
- Cover the jar and leave it at room temperature overnight to allow the flavors to meld.
- After 24 hours, strain the mixture using a fine mesh strainer into another jar or airtight container.
Making the Mocktail
- Fill a large wine glass with ice.
- Add the oleo saccharum you prepared.
- Pour in your choice of lemon sparkling water or non-alcoholic Prosecco.
- Taste your drink, then add the optional lemon juice if you want extra tartness.
- Optionally, garnish with a thin lemon slice or a sprig of thyme and enjoy your refreshing drink!
Notes
Store the lemon oleo saccharum in an airtight container in the refrigerator for up to 2 weeks. Best enjoyed fresh when mixed.
