Ingredients
  

For the Lemon Oleo Saccharum
  • 4-5 pieces peels of lemons Preferably organic lemons
  • 1 cup sugar Use a sugar substitute for a low-calorie version
For the Mocktail
  • 1-1.5 oz lemon oleo saccharum
  • 1 cup lemon sparkling water or non-alcoholic Prosecco
  • 1 oz lemon juice Optional, for extra tartness
  • 1 slice lemon For garnish
  • 1 sprig thyme For garnish, optional

Method
 

Preparation of Lemon Oleo Saccharum
  1. Wash your lemons thoroughly.
  2. Carefully peel the lemons, avoiding too much of the white pith underneath.
  3. Place the lemon peel in a jar and add an equal amount of sugar by weight.
  4. Stir the sugar through the lemon peel and muddle a few times for better flavor infusion.
  5. Cover the jar and leave it at room temperature overnight to allow the flavors to meld.
  6. After 24 hours, strain the mixture using a fine mesh strainer into another jar or airtight container.
Making the Mocktail
  1. Fill a large wine glass with ice.
  2. Add the oleo saccharum you prepared.
  3. Pour in your choice of lemon sparkling water or non-alcoholic Prosecco.
  4. Taste your drink, then add the optional lemon juice if you want extra tartness.
  5. Optionally, garnish with a thin lemon slice or a sprig of thyme and enjoy your refreshing drink!

Notes

Store the lemon oleo saccharum in an airtight container in the refrigerator for up to 2 weeks. Best enjoyed fresh when mixed.
