Ingredients
  

Main Ingredients
  • 3 large large eggs Separate yolks from whites.
  • 100 g granulated sugar
  • 1 tablespoon lemon zest Zest from fresh lemons.
  • 3 tablespoons lemon juice Freshly squeezed is preferable.
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • Butter for greasing dishes Use as needed.
  • Icing sugar for dusting Optional for serving.

Method
 

Preparation
  1. Preheat the oven to 190°C (375°F).
  2. Grease souffle or ramekin dishes with butter.
Mix Ingredients
  1. In a mixing bowl, whisk together egg yolks, sugar, lemon zest, lemon juice, vanilla extract, and salt until smooth.
  2. In another bowl, beat the egg whites with an electric mixer until they form stiff peaks.
  3. Gently fold the whipped egg whites into the egg yolk mixture.
Bake
  1. Spoon the mixture into prepared dishes, filling about three-quarters full.
  2. Place the filled dishes on a baking tray and bake for about 12-15 minutes until puffed and lightly golden.
Serve
  1. Remove from the oven, dust with icing sugar if desired, and serve immediately.

Notes

For best taste, serve warm. Can be paired with whipped cream or fresh berries.
