Preparation
- Preheat the oven to 190°C (375°F).
- Grease souffle or ramekin dishes with butter.
Mix Ingredients
- In a mixing bowl, whisk together egg yolks, sugar, lemon zest, lemon juice, vanilla extract, and salt until smooth.
- In another bowl, beat the egg whites with an electric mixer until they form stiff peaks.
- Gently fold the whipped egg whites into the egg yolk mixture.
Bake
- Spoon the mixture into prepared dishes, filling about three-quarters full.
- Place the filled dishes on a baking tray and bake for about 12-15 minutes until puffed and lightly golden.
Serve
- Remove from the oven, dust with icing sugar if desired, and serve immediately.
Notes
For best taste, serve warm. Can be paired with whipped cream or fresh berries.
