Ingredients
  

Fresh Tomato Sauce Ingredients
  • 2 pounds fresh, ripe summer tomatoes, roughly chopped
  • 1/4 cup extra virgin olive oil Can reduce to 2 tablespoons for a lighter version.
  • 10 leaves basil, cut into thin ribbons Use additional for garnish if desired.
  • 1 tablespoon lemon juice
  • 4 cloves garlic, finely minced
  • Salt and pepper to taste Adjust seasoning as needed.
  • 1 pound gluten-free pasta Cook according to package directions.
  • 4 oz parmesan cheese, grated For topping, optional.

Method
 

Preparation
  1. Toss all sauce ingredients together in a large bowl.
  2. Taste for seasoning and add salt and pepper, if needed.
  3. Allow to sit at room temperature for about 30 minutes so the flavors can meld together.
Cooking Pasta
  1. Cook pasta according to package directions.
Serving
  1. Place cooked pasta in a large serving bowl and toss with the fresh tomato sauce.
  2. Serve topped with additional basil leaves for garnish and some freshly grated parmesan cheese.

Notes

For meal prep, prepare sauce in advance and store in the refrigerator. Serve right after mixing for best results. Pair with grilled asparagus or a mixed greens salad. Avoid freezing to maintain sauce texture.
