  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-Ins
  • 1 cup add-ins (e.g., blueberries, chocolate chips, nuts) Choose your favorite add-ins for customization.

Preparation
  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or line it with paper liners.
  2. In a bowl, combine the flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, vegetable oil, eggs, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined. Fold in the add-ins.
Baking
  1. Fill the muffin cups about 2/3 full with the batter.
  2. Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
  3. Let them cool for a few minutes before transferring to a wire rack.

Notes

Store in an airtight container for up to three days, or freeze for longer storage. To enjoy, thaw at room temperature or heat in the microwave.
