Preparation of Dough
- In a large bowl, combine flour, salt, sugar, and yeast.
- Add warm water and olive oil. Knead until smooth and elastic, about 5 minutes.
- Let rise for 1 hour or until doubled in size.
Cooking the Meat
- Preheat oven to 475°F (245°C).
- In a skillet over medium heat, cook beef or lamb with onions until browned.
- Stir in harissa, salt, and pepper.
Shaping and Baking
- Divide dough into 15 small balls.
- Roll each ball into a circle about 6 inches in diameter.
- Spread the meat mixture evenly over each circle.
- Place shaped flatbreads on a baking sheet and bake for 18-20 minutes or until edges are golden.
- Garnish with fresh parsley if desired and serve warm.
