- Whisk the matcha powder and boiling water together in a small bowl.
- Add the honey and stir until dissolved. Set aside to cool.
Mixing
- Add the matcha mixture to a cocktail shaker.
- Clap the mint leaves together in your hands and add to the shaker.
- Pour in the pineapple juice, coconut water, lemon juice, and a few ice cubes.
- Close the shaker and shake well to combine.
Serving
- Strain into a glass filled with ice.
- Add soda water if desired and stir gently.
- Garnish with a sprig of mint and a thin lemon wheel.
Notes
