Ingredients
  

Matcha Mixture
  • 1 teaspoon matcha powder
  • 1 tablespoon boiling water
  • 1/2 teaspoon honey Can be replaced with a low-calorie sweetener for a diabetic-friendly version.
Other Ingredients
  • 7 leaves mint Clap in hands to release flavor.
  • 3 oz pineapple juice Can use low-sugar pineapple juice.
  • 1 oz coconut water Use unsweetened for a lower carb option.
  • 1 oz lemon juice
  • 2 oz soda water Optional; adds bubbles.

Method
 

Preparation
  1. Whisk the matcha powder and boiling water together in a small bowl.
  2. Add the honey and stir until dissolved. Set aside to cool.
Mixing
  1. Add the matcha mixture to a cocktail shaker.
  2. Clap the mint leaves together in your hands and add to the shaker.
  3. Pour in the pineapple juice, coconut water, lemon juice, and a few ice cubes.
  4. Close the shaker and shake well to combine.
Serving
  1. Strain into a glass filled with ice.
  2. Add soda water if desired and stir gently.
  3. Garnish with a sprig of mint and a thin lemon wheel.

Notes

Use low-calorie sweeteners to make the drink diabetic-friendly. Store leftovers in the fridge and stir before serving.
