Ingredients
  

For the eggs
  • 6 large large eggs Hard boil the eggs.
For the filling
  • 3 tablespoons mayonnaise Can substitute with Greek yogurt for a healthier option.
  • 1 teaspoon Dijon mustard
  • 1 teaspoon lemon juice
  • to taste Salt and pepper Add to your preference.
  • to taste Cajun seasoning Add to your preference.
For garnish
  • Chopped green onions or bell peppers Use for final garnish.

Method
 

Preparation
  1. Hard boil the eggs: Place the eggs in a pot, cover with water, and bring to a boil. Once boiling, remove from heat, cover, and let sit for 12 minutes.
  2. Cool the eggs: After 12 minutes, transfer the eggs to an ice water bath to cool for about 5 minutes.
  3. Peel the eggs: Carefully peel the eggs and cut them in half lengthwise.
Filling
  1. Prepare the filling: In a bowl, remove the yolks and mash them with mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
  2. Fill the eggs: Spoon or pipe the yolk mixture back into the egg whites.
  3. Season: Sprinkle Cajun seasoning on top and garnish with chopped green onions or bell peppers.
  4. Serve: Arrange on a platter and serve chilled.

Notes

For best taste, serve chilled. Pair with fresh salad or veggies for a well-rounded meal. Not recommended for freezing due to texture changes.
