Filling
- Prepare the filling: In a bowl, remove the yolks and mash them with mayonnaise, Dijon mustard, lemon juice, salt, and pepper until smooth.
- Fill the eggs: Spoon or pipe the yolk mixture back into the egg whites.
- Season: Sprinkle Cajun seasoning on top and garnish with chopped green onions or bell peppers.
- Serve: Arrange on a platter and serve chilled.
Notes
For best taste, serve chilled. Pair with fresh salad or veggies for a well-rounded meal. Not recommended for freezing due to texture changes.
