Ingredients
  

For the latte
  • 2 shots espresso or 1/2 cup very strong brewed coffee Make brewed coffee stronger than usual.
  • 3/4 cup milk of choice, warmed Do not boil the milk to avoid flat taste.
  • 1 to 2 tablespoons maple syrup, to taste Adjust sweetness as needed.
  • 1/8 teaspoon vanilla extract
  • a small pinch cinnamon or pumpkin spice For added flavor.
  • 1 drop pecan extract, or crushed toasted pecans for garnish Optional.
  • frozen coffee cubes if serving iced Optional for iced serving.

Method
 

Preparation
  1. Brew your espresso or strong coffee.
  2. Warm your milk until hot but not boiling. Froth if desired.
  3. In your mug, stir together maple syrup, vanilla, and cinnamon.
Assembly
  1. Pour in the hot coffee and give it a quick stir.
  2. Add the milk and any foam on top. Taste and adjust sweetness.
  3. For iced: Fill a glass with coffee cubes, add the syrup mix, then the coffee, and then cold milk or cold foam.

Notes

For a festive twist, a drizzle of gingerbread syrup blends well with maple and pecan. Use 2% or whole milk or add a tablespoon of half-and-half for richness if the latte seems thin.
