Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 cup almond flour
  • 2 cups all-purpose flour
  • 1 tsp salt
  • 1/4 cup maple syrup
Wet Ingredients
  • 1 1/2 cups warm water Used to activate the yeast.
  • 1 packet active dry yeast Equivalent to 2 1/4 tsp.
  • 2 tbsp olive oil

Method
 

Preparation
  1. In a small bowl, combine warm water and yeast. Let sit for about 5 minutes until foamy.
  2. In a large mixing bowl, combine rolled oats, almond flour, all-purpose flour, salt, and maple syrup.
  3. Add the yeast mixture and olive oil to the dry ingredients, mix until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth.
Rising
  1. Place the dough in a greased bowl, cover it with a cloth, and let it rise in a warm place until doubled in size (approximately 1-1.5 hours).
  2. Punch down the dough, shape it into a loaf, and place it in a greased loaf pan.
  3. Cover and let rise again for about 30-45 minutes.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Bake the bread for 40-45 minutes or until golden brown.
  3. Remove from the oven, let cool for a few minutes in the pan, then transfer to a wire rack to cool completely before slicing.

Notes

Store cooled loaf wrapped in plastic or in an airtight container at room temperature for up to 3 days. For longer storage, slice and freeze with parchment between slices. Frozen slices last up to 3 months.
