Preparation
- Muddle lime pieces in your glass or pitcher to release the juices. Use the handle end of a wooden spoon if you don't have a muddler.
- Clap the mint leaves together in your hands until the scent is released, then add to the lime and give it a gentle press with the muddler.
- Blend the mango and water in a small blender to create a mango puree.
- Add the mango puree to the lime and mint mixture and stir gently.
- Fill the glass with ice and top with soda water (or alternative) and stir gently.
- Garnish with extra mint and a lime wheel.
Notes
Serve in a tall glass over ice. Pair with a high protein meal or enjoy as a lighter option. Keep soda water added just before serving to maintain fizz. Store mango puree in the fridge for up to 3 days.
