Method
For the Mango Chicken
- Heat the oil in a large skillet over medium heat.
- Add chicken, turmeric, garlic powder, and cayenne. Cook until the chicken is browned on the outside (about 5 minutes).
- Add mango chunks, onion, and lime juice. Cook for another 5 minutes or until chicken reaches an internal temperature of 165°F.
- Remove from heat, let cool slightly, and slice the chicken.
To Assemble the Wraps
- Place lettuce leaves on a plate.
- Top with carrots and zucchini slices.
- Add mango chicken mixture.
- Optionally, garnish with cilantro, extra mango slices, and a drizzle of lime juice.
Notes
These wraps can be served cold or warm. Serve with lime wedges for an extra tangy flavor.
