Ingredients
  

For the Mango Chicken
  • 1.5 tablespoons avocado oil or olive oil Use whichever oil you prefer
  • 1 pound chicken breast, trimmed Ensure chicken is boneless
  • 0.25 teaspoon turmeric
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon cayenne Adjust according to spice preference
  • 1 large ripe mango, cut into 1-inch chunks
  • 2 tablespoons lime juice
  • 0.5 medium red onion, thinly sliced (about 1 cup)
  • Salt and pepper to taste To enhance flavor
For the Wraps
  • Bibb or romaine lettuce for wraps Choose based on personal preference
  • 1 cup carrots, thinly sliced
  • 1 large zucchini, thinly sliced and cut into ~3 inch pieces
Optional Toppings
  • Cilantro
  • Extra slices of fresh mango
  • Extra lime juice

Method
 

For the Mango Chicken
  1. Heat the oil in a large skillet over medium heat.
  2. Add chicken, turmeric, garlic powder, and cayenne. Cook until the chicken is browned on the outside (about 5 minutes).
  3. Add mango chunks, onion, and lime juice. Cook for another 5 minutes or until chicken reaches an internal temperature of 165°F.
  4. Remove from heat, let cool slightly, and slice the chicken.
To Assemble the Wraps
  1. Place lettuce leaves on a plate.
  2. Top with carrots and zucchini slices.
  3. Add mango chicken mixture.
  4. Optionally, garnish with cilantro, extra mango slices, and a drizzle of lime juice.

Notes

These wraps can be served cold or warm. Serve with lime wedges for an extra tangy flavor.
