Ingredients
  

Potato Base
  • 4 large large potatoes, peeled and cubed
  • 1 cup sour cream Can be substituted with Greek yogurt for a healthier version.
  • 1 cup shredded cheddar cheese
  • 1/2 cup cooked bacon, crumbled
  • 1/4 cup green onions, chopped
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 1/2 cup milk Use low-fat milk for a lighter option.
  • 1/4 cup butter, melted

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain well.
  3. In a large bowl, mix the cooked potatoes, sour cream, milk, melted butter, garlic powder, salt, and pepper until well combined.
  4. Gently fold in the cheddar cheese, bacon, and green onions.
Baking
  1. Transfer the mixture to a greased baking dish and spread it evenly.
  2. Bake in the preheated oven for 25-30 minutes, or until heated through and slightly golden on top.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days. For freezing, cool completely before transferring to freezer-safe containers and freeze for up to 2 months.
