Ingredients
  

For the Mocktail
  • 1 tablespoon lemon juice Freshly squeezed for best flavor.
  • 2 slices lemon rounds For garnish and flavor.
  • 1 teaspoon honey Optional for sweetness.
  • 6-8 leaves fresh mint leaves Muddle for flavor.
  • 0.5 cup coconut water Hydrating base.
  • 0.5 cup soda water For fizziness.

Method
 

Preparation
  1. Muddle lemon juice, mint leaves, and honey (if using) in a tall glass.
  2. Add lots of ice to the mix.
  3. Top with coconut water and soda water.
  4. Stir gently to combine. Garnish with lemon rounds and mint sprig before serving.

Notes

For storage, keep the mixed mocktail in the fridge for up to 24 hours. Best served chilled with extra ice. For meal prep, combine lemon juice, muddled mint, and honey in a sealed jar for up to 3 days.
