  • 3 tablespoons capers, rinsed and drained
  • 1/4 cup fresh lemon juice Use fresh lemon juice for best taste.
  • 1/2 cup olive oil Slowly add while whisking.
  • 1 teaspoon Dijon mustard Can be substituted for whole grain mustard.
  • 2 cloves garlic, minced
  • to taste Salt and pepper Taste and adjust seasoning.
  • for garnish Chopped fresh parsley Optional

Method
 

Preparation
  1. In a bowl, whisk together the lemon juice, Dijon mustard, and minced garlic.
  2. Slowly drizzle in the olive oil while whisking continuously until the sauce emulsifies.
  3. Stir in the capers and season with salt and pepper to taste.
  4. Drizzle over your choice of fish, chicken, pasta, or roasted vegetables. Garnish with chopped parsley if desired.

Notes

Store in an airtight jar or container in the fridge for up to 4 days. Whisk or shake to re-emulsify before using. Freezing is not recommended as it can alter the texture.
